Controversial as it may be I actually do enjoy a homemade lunch box! That being said, I don’t like a homemade sandwich, I only enjoy lunch when it’s a proper meal. I decided that I would make some Greek salads for lunch this week and I thought I might as well share them with you!
The first thing I did was prepare all the food, I made 6 boxes so it took a little while to chop everything up but if you weren’t making so many it wouldn’t take very long as all! I cut a yellow and green pepper and a red onion into small chunks. I scooped the wet inside out of half of a cucumber and then cut it into chunks along with half a block of feta cheese. I poured some boiling water over 250g couscous and cut up a lemon into chunks. Once I had everything ready I assembled the boxes with couscous on the bottom and a bit of each of the prepared ingredients on top. I also added some green olives from a jar and some chickpeas which I rinsed and cooked in the microwave for 1 minute. I have put them all in the fridge ready to squeeze the lemon over the top and enjoy for lunch every day this week! I have made them to last three days but if you store them in an air tight container then they would probably last the whole week!
