Hi guys!
My boyfriend and I have been working on reducing the amount of processed foods we eat and as a result we are trying to buy less snacks. That being said, I don’t want to eat any less snacks! I decided I would try and do more baking to fulfil my snack needs so I made some flapjacks and they actually turned out pretty good. I thought I’d share the recipe in case anyone else is looking for something quick and easy to make that satisfies that little (or large) sugar craving!

Ingredients:
150g Unsalted butter
75g Golden syrup
150g Light brown sugar
350g Porridge oats
A pinch of salt
100g Milk chocolate
100g White chocolate

- Preheat the oven to 180˚ (160˚ if using a fan oven)
- Line a tray with greaseproof paper (I didn’t do this and mine still came out okay so don’t worry if you have to skip this step!)
- Put the butter, syrup and sugar in a small saucepan and stir over a medium heat for about 5 minutes or until the butter is melted and the sugar has dissolved.

- Remove from the heat and stir in a pinch of salt
- Mix the oats with the butter, sugar and syrup mixture until it is all fully combined.
- Pour the oats into the baking tray and use the back of the spoon to push down the oats evenly.

- Bake for 20-25 minutes for soft and chewy flapjacks (if you want them to be harder then cook for slightly longer)
- Melt milk chocolate (I do this in the microwave but you can do it in a bowl over boiling water if you prefer) and drizzle over the flapjacks. Repeat with the white chocolate and leave to harden
- Once the chocolate has hardened and the flapjacks are completely cool, use a sharp knife to cut the flapjacks into individual pieces (as big or small as you fancy!) and remove from the tray.

I hope you enjoy them as much as I did! I’m definitely going to make them again as they really didn’t take too much time or effort and I felt somewhat better eating these than a flapjack from the shop with all sorts of ingredients in.
